Beyond Guacamole: Our True Roots

At Cavita, every dish we serve tells a story—of heritage, land, and respect for the communities who nourish it. One question guests often ask is why guacamole, perhaps the most internationally recognized “Mexican” dish, does not appear on our menu. The answer is simple but profound: we choose not to serve avocado out of respect for the land and its people.
In recent years, the global obsession with avocados has placed enormous pressure on Mexico’s environment. Vast deforestation, water scarcity, and cartel violence linked to avocado farming have turned what was once a seasonal fruit into an industry that strains both land and lives. To serve guacamole without acknowledging this truth would feel careless.
Instead, we celebrate Mexico’s true diversity of ingredients—corn, beans, chiles, tomatoes, squash, loquats, cactus, and so much more. These are the flavours that root us in history and carry less harm to the earth. Thanks for understanding.
